2017 Girl Scouts Arizona Cactus Pine-Council Recipe Contest Winner, Sandy
Sandy’s Spicy Salad (makes 6 servings)
Ingredients
- 1 cup cucumber
- 1/2 cup avocado
- 1 cup tomato
- 1/2 cup canned poblano peppers
- 3 mozzarella cheese sticks
- 1 lime
- Salt and pepper
Preparation
- Drain canned poblano peppers and cut into ½ inch squares if needed
- Peel avocado and cut into ½ inch cubes
- Cut cucumber into ½ inch cubes
- Cut cheese into ½ inch rounds
- Put all of the ingredients into a bowl and add a squeeze of lime juice to taste
- Stir gently
- Add salt and pepper to taste
