2017 Girl Scouts Arizona Cactus Pine-Council Recipe Contest Winner, Sandy

Sandy’s Spicy Salad (makes 6 servings)

Ingredients

  • 1 cup cucumber
  • 1/2 cup avocado
  • 1 cup tomato
  • 1/2 cup canned poblano peppers
  • 3 mozzarella cheese sticks
  • 1 lime
  • Salt and pepper

Preparation

  • Drain canned poblano peppers and cut into ½ inch squares if needed
  • Peel avocado and cut into ½ inch cubes
  • Cut cucumber into ½ inch cubes
  • Cut cheese into ½ inch rounds
  • Put all of the ingredients into a bowl and add a squeeze of lime juice to taste
  • Stir gently
  • Add salt and pepper to taste
